I often find myself in a lunch rut. With various food allergies and intolerances, finding something we can all eat is challenging. As a busy mom, I also like quick lunches…because we sometimes get wrapped up in a project for our homeschool (or more likely we don’t get started in time, so we are running late)! Anyone relate?!!
I decided if I could just pull together a list of ten fast lunches I could rotate every two weeks, our day would run much more smoothly! By keeping the ingredients on hand, we can mix and match and change things up depending on our schedule.

1) Peanut Butter and Banana Roll-Up
2) Grilled Cheese and Tomato Soup

5) “Snack-y” Lunch
6) Bean and Cheese Burritos
7) Baked Potato and Fixins
8) Sandwiches
9) Taco Salad
10) Homemade Chicken Nuggets
